Text colour in Illustrator 2021 not changing

I have added another bit of text for a logo I'm designing using Illustrator 2021 and the text is black in colour, as it usually is to start with. When I try to change the colour to the gradient swatch I want or even just any other plain colour it will not change at all! I've tried everything I know, but I'm still having this annoying problem (The text's mode is RGB and not Grayscale, just the same as the whole project). Due to this problematic issue I cannot complete my design. Can anyone help please?

Select the text object with the Selection tool, try to fill the text with none and add (or change) the color in the Appearance panel.
