I don't see the solution you are pointing to.

 

However, my suggestion would be to use the Appearance panel.

Select the text, and click on Type.

In the Appearance panel menu, choose Add New Fill or change the current fill to the gradient you want.

You can add the appearance to the Graphic Styles panel and apply it to other text that consists of any font or size.

If you want to apply style, font and size consistently, you can add the style to the Character or Paragraph panel.
