You can customize all Illustrator shortcuts on the Keyboard Shortcuts window (Edit Menu > Keyboard Shortcuts, or Ctrl/Cmd + Shift + Alt + K). There, you can change both menu shortcuts and tool shortcuts and even save custom presets.

While typing, you somewhat left the typing mode and only then the tool got changed.
The question would be what made Illustrator exit the typing? Did you hit Esc?
When was the last time you rebooted the computer?
Oh, and you mentioned a Wacom. Does that also happen when the Wacom is plugged off?

No, i did not hit Esc, also i reboot my mac once a week,
not that you mention wacom, i disconected and looks like i don't have this problem anymore,
it could be the drive of the wacom table, i'll check if i have an update.
thank you for your help, i really appreciate it, i never thoug it could be the wacom

I have left the pen on top or close to my wacom in the past, which caused some bugs here and there with misclicks and eventually caused me to facepalm myself when I figured it out hehe.

That is really odd and I don't think it's related to shortcuts. Illustrator shouldn't leave typing mode unless you press Esc or Ctrl+Enter. Does this behavior have any patternn? Like always when you type the same character or something like that. Also, can you try a different keyboard, perhaps?
