How do you get rid of all those foreign language fonts in Illustrator's Font Book They occupy half the listing.

Those are generally system fonts that are installed on your operating system by default, so it's not advisable to remove them, and there's no way I'm aware of to hide them in Illustrator. You could suggest this as a feature request at https://illustrator.uservoice.com, as I think a lot of other folks would appreciate the ability to do so.
