I have used adobe illustrator for a long time now and I've always worked with a blank, white canvas. Not this checkerboard, measurement, thing type of artboard. I probably hit some weird button which did this, but how can I get my workspace to what I am used to?

It looks like there are 2 artboards created when selecting a film or Video preset.
The large canvas you see is the second artboard, delete it.

Go to View > Hide Transparency Grid

The checkerboard is the Transparency Grid. You can hide it in the View menu.
The green elements are the video rulers, the centre mark and the cross hairs. You can hide the video rulers in the View menu and the other things by double clicking the Artboard tool and disabling the corresponding options.

yeah well I have made a document of 5k by 5k pixels and the so-called video rulers are in those dimensions if you get what I am meaning. If I change the checkerboard to off the white "canvas" is wayyyy bigger than 5k by 5k

Preferences > User interface > Canvas Colour - Match user interface brightness
is yours set to white ?
