When saving in Illustrator it defaults to Illustrator 2020, how do I switch to the latest version?

A few years ago a client could only use files saved as Illustrator 2020 or earlier. I figured out a way to default to Illustrator 2020 when saving. It's been a few years now, but I would like this to default back to the latest version rather than 2020. Is there a way to change which version it saves out as or can I reset to default settings or something?

    It's a bit confusing, but Illustrator 2020 format IS the latest version... it covers anything v24 and up.

    The Legacy CC is for anything before that in the CC line
