Why does Illustrator lack this function?

Why is it not possible to change the handles for multiple selected anchor points? For one, or a few selected anchor points, it is possible to change their handles from, say sharp, to smooth in the control bar. But when selecting all the anchor points on a path - these options disappear!

Now I have a map whith a path that only has sharp anchor handles and I need to change them all to smooth. I cannot do this. It should really be as simple function.
