Every time I open a new Illustrator document, I have to manually pull up my swatches and symbols pannel. I have tried making new saved layouts, but every time I close Illustrator and open it again, they dissapear. Is there a way to make them stay?

@Mr. Giraffe I agree with @Bill Silbert Creating your own workspaces saves so much time. I have one for print, and one for web; As you know, print and web will have two different settings, but, I also create one with my students to show them what I use in class. By using your own workspaces, it should stay at the last workspace used. But, as long as you save it, you can always reset it to go back to how it's set-up on your screen! It's a game changer!

@creative explorer I have tried that, but evertime the application closes, when I open it again, they are gone. I have also tried to click "reset" on my workspace but that doesn't work either. Could it have something to do with the windows being my own swatch and symbol libraries?

The best way to test that theory is to delete any workspaces that use your custom swatches and symbols and make a new workspace using only the default swatches and symbols and see if that workspace holds.

You could create a Custom Workspace that will always employ the Panel arrangement that you have set up. For details on creating and saving workspaces in Illustratot see: https://helpx.adobe.com/illustrator/using/customizing-workspace.html.
