Changing a global Pantone swatch in Illustrator

Hi, I am working on a file that will be printed single color Pantone and I need to change my global swatch. How do I swap out my current global PMS swatch (302 U) for a new one (3025 U)?

Create the other color as a new swatch.

Then click on it in the swatches panel.

Press Cmd and click on the font you want to replace.

From the swatches panel menu select "Merge Swatches"
