I just upgraded to Illustrator CC 2017 and I noticed that sometimes I have swatch names in my swatches panel that have the names colored slightly gray.

What does this mean?

They are spot colour swatches in book colour mode. Open the Swatch Options to check that.

If they are gray looking at the swatches plane, you may have a plug in conflict such as ESKO.

If they are grayed out after you click on them,

that was always this way, but just means you have a book color, and you need to change the color mode first to be able to edit that.

the only ones i can see like that are 'none' and 'registration' and i'd guess they're singled out because they're always in every doc and uneditable.
