I'm trying to make a partial ring with rounded ends like the one here: http://i.imgur.com/0jFYwG8.png

Is there any way I can make this with a consistent line thickness?

Mel,

You may create the circle as a stroke nofill path with Round Cap, then cut it half a stroke weight short of each rounded end; you may Object>Path>Outine Stroke if you wish it as a filled path.

To add to Jacob's method.

Use the new transform features on live shapes to open up the mouth of your shape, then just delete the point to get you final path.
