there's no way in illustrator.

however, this plugin does exist:

Text Recognition in Illustrator: OCR plug-in to convert outlined text to live text - Esko

I have no experience with it though.

You can use the OCR feature in Acrobat to recover outlined text.

If you converted text to outlines to edit how the characters appear, like to make your own font, you could use Fontself to actually make the font. Then set the text in your new font.
