Basically, you can't. Such a feature wasn't introduced into Illustrator until CS4. Anyway if  you want a document of that many pages you really ought to be using a page layout programme such as InDesign or Quark

You don't. Illustrator has been limited to one page per file from its beginning, all the way until its latest version, CS4. As a cumbersome "answer" in earlier viersions, Adobe trotted out ordinary page print tiling as if it were some kind of new concept.

1. In Document Setup, set Illustrator's single page (its so-called "Artboard") to oversize dimensions reflecting multiples of the desired page size width and height. (Ex: for 30 vertically-oriented letter-size pages, make width 8.5*6 and height 11*5.)

2. From the View menu, select Show Page Tiling.

3. Go to the Print dialog, Setup pane. Set the Tiling popup menu to Tile Full Pages. Click Done.

Illy's a bit spastic when it comes to multiple pages. Even with CS4's multiple artboards. Page tiling will get you most of the way but it's really not a very good solution.

Instead go to InDesign for documents with more than a very few pages - it's much easier. And you can Copy/Paste from Illy to ID without any problems, with the possible exception of compound paths which sometimes don't work properly in ID and have to be edited separately there.

Hmm. I find nothing spastic about multiple pages. What am I missing?

You could setup 8 separate files made up of 4 page signatures or 16 separate 2 page spreads, or 30 individual 1 page spread ( then create a 30 page PDF final file.  Beware that signatures and printer spreads run in 4's ( that's where I got 32 and 16 ).  Your 30 pg. PDF could be printed on any 8.5x11 desktop printer.  I'm not sure how your end result will be output, so I cannot specifically recommend one method over another.  Beware that printer spreads and signatures do not run as pg. 1, pg. 2. pg. 3, etc., etc.  If you're planning for laser or inkjet desktop printing at 11x17, you'll have to pre-plan for 2-sided printing via 16 files.  Sure, InDesign would definitely help, but I'm assuming you don't have it and prefer to use Illustrator.  Somewhat of a hindrence, but absolutely do-able in pre CS4.
