hey im wondering how i can make overlapping lines on shapes turn white, right now i've broken the line up in to two and turned half of it white and the other half regular, but it makes a sharp line that doesn't follow the shape of the circle underneath. been looking for answers for so long now would really appreciate your help 🙂

If you outline the lines, you can select both the line and the background object and Alt -click Exclude in the Pathfinder panel to create a compound shape.

The sample file was originally created in Illustrator CS5 and in that version it is working properly.
Just noticed that using the file in Illustrator CC 2020 is a bit wonky since the Calligraphic brushes change their behaviour when you move them around (that should not happen). Probably it would just have to be recreated in CC 2020.
