Issues with black as a spot color

Illustrator CC 2017 / Windows 10-64 bit

I am attempting to output a spot color file  with PMS 185, PMS 286 and black. On the black objects, I select the object, open the color picker and move the cmy sliders to 0 and the K slider to 100% and de-select and re-select, open the color picker and the cmy colors re-appear. Can someone tell me what I am doing wrong?

    Apart from the document clor mode:

    Work with Global colors and your life will be much easier.

    Go to your swatches panel, double click the black swatch (not registration) and change it to a spot color. Then apply the spot swatch to the object stroke or fill.

    Editing your objects will not work as you expect it to.

    Make sure you are working in CMYK.

    File >> Document Color Mode >>CMYK

    That would happen if your document is in RGB mode for web pages and video.
