With its new customizable tools feature Illustrator CC 2019 actually allows you to add, subtract or move any tools you want to your toolbar regardless of which workspace you're using. See Illustrator CC 2019 (23) : Customizable toolbars tutorial - YouTube for a tutorial on how to use this feature. If you're using the Essentials workspace, there is no Knife tool. Switch to Essentials Classic or any other Workspace in the upper right of your Illustrator window and your Knife will reappear, probably hidden under the Scissors (C) or the Eraser tool (Shift + E).

Easiest way to find it though is to just change your layout to Essentials Classic. It will then be nested in there under the eraser tool.

I thought i was going mad, your answer helped. Why did adobe decide to remove this from the workspace? What tool does Adobe want us to use to do the same operation in the new workspace?

The tool was not removed, just hidden from the toolbar. If you need to use it, use a different workspace or create your own toolbar.

In CC 2019, the Knife Tool was moved. It’s now found under the Pathfinder panel or can be accessed via the "Edit Toolbar" option if it's not visible.

In the default 'advanced' toolbar, it's under the Eraser:

Where do you see it in the Pathfinder panel?
