I have a document currently set up as 6x9. When I go in to file-document set up- and change it to 5x7, the spread still says 6x9 but the margins adjust. I went in layout-margins and columns-selected enable layout adjustment.
What do I have to do in order to get it to be a 5x7 page size?

Hi Alie,
unfortunately this is not that easy.
You have different masters applied to the document pages.
Masters could govern page size and margins on document pages and also size and position of threaded text frames on document pages. However to make that work best you need the so-called Primary Textframes on the masters.
Things get more complicated if you did overrides on margins values, did changes to the size of pages using the Page tool that override the values on the masters and you did not wor

Sounds like you may have made a custom page size and applied it to all of the pages?
Here my Document is set up to 5x7 but the pages are set to a custom size that I made via the Edit Page Size>Custom... icon in the Pages panel. Try selecting all of the pages and make a new custom size that matches the 5"x7" document setup

Thank you. I was able to change the size using your direction but how do I get the text frames to adjust with it?

You can use a new feature - Adjust Layout Shift+P - try it. It works fine

I changed the master pages and the margins moved but not my text frames.
How do I snap by text frames to guides so they move with them?

I saw it adjust but the document still says 6x9 although I did the steps and set it at 5x7.
Is that normal?

I did that and the page size changed but this was the result. It also didn't change the other pages

Best never do that if you later want to change page size and margins where text frames should follow.
To give you the best options you now have with this document we need to have a look into your document.
Maybe it's even best to start from scratch with the intended new page size and margin values?
