i edited the master page of this proposal template we bought to include the name of the company we're pitching (see right page header), but that didn't seem to have any effect on the left page header, or any other page that's not a white background. any ideas?

Did you cut the link between the text frame on the master page by clicking on the frame with Shift/Command key on one of the document pages? If so, you can select the frame on the document pages, where as all master page items are locked normally. If so, you have to relink the pages with the master pages again.

I'm not sure if I understand you correctly:

a) Worrying about the text? > The text doesn't change automatically. You have to edit the left page too.

b) Worrying about the styles?

> The left page has a master page of its own and/or an individual paragraph style. Search through the page panel/ master page section and/or the paragraph styles panel.

shown here is the master page for the left, and the header shows up properly.

the issue is that the header does not reflect this wording on any page that is green.

it appears in grey type as "Brand Proposal" rather than "CMT Digital Proposal" - must be some disconnection between master pages than than green text
