Use Cell Styles to dress cells. Build cellstyles while nothing is selected so that they are "pure". Column widths are outside the scope of a style, so set them manually either by dragging or better, by selecting columns and using the Table panel to set the physical width. You can also set the physical height of a row using the Table panel, but that is rarer. And yes, the fields available in the Table panel are also in the Control panel.

please show us the full width of the Control Panel.
My guess is, that your screen does not show the table controls because the layout window has no space.
Increase the resolution how InDesign is showing the layout window or use a larger screen.

2025 is very buggy - and lags a lot - especially on mMacs.
If you can - downgrade to 2024.
