Does anyone know why I can't see all of the panels on the right? I only see properties, pages, and CC libraries, but I'm really looking for layers, swatches, stroke, and color.
look at your workspace, you can change workspaces

choose a workspace that has most of what you need. go to window and add what you need, created a workspace for yourself.

To add to Jonathan's thoughts above, you're probably using the Essentials Workspace, which has the Properties panel and not much else. To pick another Workspace (such as Typography), look in the upper right corner of your application window and click on Essentials to get a popup menu to choose another Workspace.

Take the time to create your own custom workspace. Well worth the effort in the long run.
