Has anyone else had a problem with the Overprint Preview in InDesign, where when selected the Text Select tool turns the entire screen white when dragging over chunks of text?

A known bug on macOS Sonoma. Try to toggle GPU Performance in Preferences (if available) or/and disable rulers. You can also search the forum for Sonoma to know more about InDesign issues on macOS 14.

Indesign has not been made compatible with Sonoma - hard to call this one a bug when the OS is not supported.

Adobe now provides conflicting info regarding Sonoma support.
On Sonoma compatibility page, InDesign is now listed as supported with known issues:

Regardless, there must be a bug somewhere there to cause the issue. I'm inclined to think the bug is in Sonoma rather than InDesign.

I noticed that today's InDesign update has not fixed this major issue. The only version of InDesign that can be used correctly is 17.0 from 2 years ago, meaning evert file from the past 2 years needs to be converted back from 19.0 to 17.0 to be fully usable.
