Tracking by default seems to be set at +/-10, but I use -5 far more frequently. I thought I remembered a way to change this, but now I can't seem to find it. Any help would be appreciated!
Ah, ok. The value I was pointing you to is used in conjunction with a keyboard shortcut. With text selected and the Alt(Windows)/Option(Mac) key held down, pressing the left or right arrow keys will decrease or increase the Tracking by the value set in the Preferences. This method is great as it's fast and you don't need to find the Tracking option within any panel.

Within the Units & Increments section of the InDesign Preferences is a Kerning/Tracking value that you can set to whatever you like.

I'm setting it to 5/1000 em (it was 20 by default) but it still jumps by +/-10 when I hit the up/down arrow in the Character panel.

FYI: The same keyboard shortcut I described above can be used to alter Kerning. Instead of selecting text just place the cursor between two characters and apply the keyboard shortcut.
