We color correct our files, then export.
Then we tweak our images to black and white, then export.
Now, we would like to go back to color. Is there a way to undo the edits to BW?
Currently we go image by image, avg 900 images. There has got to be a better way!
I realize I'm not looking at your entire workflow. But one easy way to do it would be to create virtual copies and convert the virtual copies to black and white. That would leave the originals in color. Others may have better ideas.

If you are looking to go back on a particular image, then look in the History Panel on the left side and find the step where you exported in color. Click on it and you will be back in the original color image without the B&W edits.
If you want to do a batch process back to color on all 900 images, I do not know of a way to do this

This should work:
Open one of the files in Develop, and click on Color to convert it back to color.
Then create a Develop preset where only Treatment (color) is checked.
Select all the 900 files in Library and apply the preset.

opening one in develop and then clicking on color to convert, did nothing. But I will use virtual copies in the future!

In grid view, select all the photos and type V - this will convert black and white images to color and vice versa - but all the other edits that you did to optimize the black and white versions (such as increased contrast and color) will still be present. Stepping back in History one image at a time is the alternative.
I agree on using VCs - select all the images in grid view, right click in one and choose Create Virtual Copy. Then use the Library Filter bar, Attribute tab, to filter to just see the VCs (look for the icon with the turned up page corner) - edit and export, then turn the filter off.
