You are using the X-rite plug-in to build a custom DCP (DNG) camera profile, right? If so, why are you selecting 360 DNGs? It isn't designed for that.
Can you explain what you're trying to do with the plug-in?

Yes, I am using the plug-in to do that. I am selecting just one DNG after joining 9 multi bracketed DNGs. Of course the DNG I am trying to apply DCP needs exposure editing since it's darker. But this is not the point, the problem is that plug-in crashes

You only need to select ONE properly exposed DNG to build the profile.
Does it crash if you pick just one?

Yes, it crashes if I only pick one. The weird thing is that if I shoot 1 DNG (and not multi bracket) then it works. But it's not enough for me..quality is lower

You have to feed it a DNG. When you say 'shoot DNG', you have a camera that provides that kind of raw?

Quit Lightroom Classic.
macOS: Press and hold the Shift + Option keys.
Windows: Press and hold the Shift + Alt keys.
While holding down the keys, launch Lightroom Classic.
When asked, select "Yes".
You know you can also build the profile in the standalone and free X-rite software?

Yes, my camera do also DNG. I've kind of solved it by shooting first #1 DNG pano, I can run correctly the plug-in in LR and produce a preset. Second I shoot in multi bracketing #9 DNGs, and after joining them into one pano I am now able to apply the preset. Of course the exposure needs to be more accurate possible otherwise colors may change. So it seems the issue was with DNG files produced in multi bracketing, probably it's something related with metadata attached to file that make the plug-in crashes.

Good to hear you got it all working.
As for exposure when making such profiles, it isn't critical at all, with one exception; you cannot blow out the highlights in all channels on the whitest patch. Virtually every app I have that builds such profiles (three) all products will pop an error if you do so.
The profiles are made to profile an illuminant (spectrum) of light. So if you shoot one capture in daylight that is exposed, such no white clips, you can use that profile in any daylight situation. That is what is profiled. Again, all is outlined in the video. And after, you could clip highlights or under-exposure and still use the profile, although doing so isn't recommended outside the use of profiles (don't clip highlights you don't want to clip etc).
