When I use the HDR Merge feature, Lightroom saves everything into a new HDR image file (.dng). But looking at the properties, I noticed that this file is much smaller than the original raw file. I would like to know if it loses quality, in case I later want to print large formats, and if there are any settings to change, to obtain better quality files

Yes, it is smaller because it uses JPEG XL compression. This is very sophisticated compression, that does not cause visible loss at all.

LR 13.0 started using JPEG XL compression rather than JPEG, which it used before. JPEG XL produces the same quality but with much larger space savings:

There is no way to change this, but there's no need to, since there is no visually perceptible differences.
