I have already selected "Start finding faces in entire catalog" . i know how to pause this process. my ? is - can I change it tp "only find faces as needed".

I don't think it is possible to filter this by the spcific "People"
Lightroom Classic now re-runs face detection to upgrade the existing face records but excludes photos that have never had face detection run before. Any photos that have at least one confirmed face or at least one manually drawn face region are also excluded to preserve your previous edits; the unconfirmed faces is those photos remain unconfirmed.

ok, so I started using facial recognition without knowing what I was doing. I pulled up a couple of images and tagged them with the appropriate names. Now all the faces that pop up are tagged with those 2 names even tho they belong to other people.
Is there a way of undoing what I did?

You'll find a good place to get assistance with Lightroom Classic features is found in the Help menu. As for facial recognition, have a look at Use Intelligent facial recognition in Lightroom Classic At bottom of this document you'll see a section titled 'Find Faces Again'. This section should help you fix the issues you describe.
