Hey @Scott Citron,
It looks like you're using an older version of Lightroom Classic. Could you try updating to the latest version to see if that resolves the issue? If the problem persists after updating, please share a screen recording—it can really help us understand what’s going on. Also, has this issue happened to you before, or is this the first time you’ve encountered it?

Try to restart Lightroom and check again.
Which folder do you have renamed in LR? Does you see the renaming also in Finder?
Try resetting the preferences of Lightroom Classic: How to reset Lightroom Classic preferences (adobe.com)
It's recommended to backup your preferences before you reset the preferences to the default settings:

If this all doesn't help, please provide a copy of your 'System Info'. This can be get from the LrC Help > System Info menu item. There's a copy button in the System Info dialog. Press this button and paste the info into your next forum post.
A screenshot or a short screen recording as @CMass will be also helpful.

LrC will only display folders that contain at least one imported photo.
Folders that do not contain imported photos will not be visible in the Folders panel.
In other words – LrC is not a file browser, and will not show the entire HD folder structure – unless every single folder contains one or more photos that have been imported.
However, renaming a folder should not change the entire folder structure, but since folders are sorted alphabetically, it might move to a new position after renaming.
Perhaps you could post a screenshot that illustrates the issue.
Use the Insert Photos button in the toolbar to embed it in your post.

Show us a screen capture of your LrC folder panel. Use the "Insert Photos" icon to include your screen capture in your reply. Do NOT attach files.
Also please show us another screen capture of the equivalent part of the Mac Finder window so we can see the mismatch.
