Edit to say: Is there anything that can be done without losing ALL of the work I did AFTER this wedding edit?

For one of these photos where the edits appear to be lost, did you perhaps (accidentally) import the file more than once? And now one set of photos has edits and the other one just has the import preset? Please search for one of these in Lightroom Classic files by following all four steps below:
1. In the Lightroom Classic Library Module, on the left, under Catalog, click on All Photographs
2. Turn off all filters (Ctrl-L once or twice)
3. Turn off all stacking (Photo->Stacking->Expand All Stacks)
4. Search for at least one of these photos by file name using the Lightroom Classic Filter Bar

For one of these photos where the edits seem to have disappeared, what do you see in the History Panel of the develop module? Can you show us a screen capture of the History Panel (use the "Insert Photos" icon, do not attach files)?

To clarify - I added the presets and did some color adjustments and such - but all else is missing.

Idea #3 — please check to see if somehow you have more than one catalog file. Go to File->Open Recent and see if there are multiple catalogs listed there.
PS: I specifically asked you to not attach files, and you attached files. My web browser cannot open attached files here. In the future, to help you properly, we need the files included using the "Insert Photos" icon.

Apologies - I didnt understand
There are lots of catalog files there but I dont use those = I only use the august 12 one. always. Last August I had a big old syncing issue and had to make a new one = I probably dont have the correct workflow - but I always work from the same catalog for all of my shoots. Once they're delivered I remove them from LR.

Nevertheless, it would be a good idea if you opened those other catalog files and looked at their contents to confirm that these "lost" edits are not in one of those other catalog files.
Do you make backups of the catalog after every editing session? If so, look in those backups as well. It seems like if you have critical photos (like wedding photos), making backups of the catalog file after every editing session would be a good strategy.

I see a .lock file - but it just keeps updated every minute... I am not computer savvy.
To Clarify
The lock file gets created when you open a catalog. It exists so that you cannot open that catalog twice. The lock file will be deleted when you close the catalog properly. If LrC crashed, or you force quit, then the lock file does not get deleted. In that situation you will not be able to open the catalog, and you should get an error message stating the catalog is in use.
At any rate. this is not your issue.

Based on the name of the catalog in use. I question if this is the correct catalog. August was a bit long ago for a wedding session (but I am not a Pro, so...). Now you stated you are using LrC v12.5, and the catalog has v12 as part of the file name, so it could be the correct catalog. But August???
Many members would advise on having just one catalog. But for the Wedding Business , I would think that separate catalogs for separate clients, or session's, is probably common. As such, I am thinking again, is this the correct catalog.

That is the correct catalog - I know it says August but that was when I had made a new one.

Also, not related to your problem, And you might be waiting for the Wedding session to be over before risking any mods whatsoever to your computer. But have you noticed that your GPU driver is out of date?
You have v516.59, (released last year) while the current Studio driver at NVIDIA is v546.01 (released two days ago)
This could effect the use of AI Masking.
