It is hard to investigate this over the internet, but it is a frequent occurance on Macs, especially after a Mac OS update. It is usually a permissions problem.

Many of us would recommend using Mac Finder (or Windows File Explorer) to transfer large numbers of files or whole folder trees. Lightroom is not a file browser, and when it sometimes drops the ball bad things happen to the files. After the files are transfered outside of Lightroom, in the Lightroom Folders panel, do a "relocate folder" or "find missing folder" on the top-most folder(s) that got moved/copied.

I didn't upgrade my Mac, I actually downgraded it several weeks ago. I understand that lightroom is not file browser, but it does give you the option to move folders so all keeps nice and tidy with all the info on the work I have done to the photos. Also I just noticed that I can't even do that in folders on the Mac's hard drive itself. If it didn't let me move folders around since I started using it like 5 years ago, I wouldn't mind, but since it stopped working and it's making the whole process more complicated and tedious, then I guess I have to ask why is this happening and what can be done to bring it back to normal, especially because when something does not work as it used to, usually it could be a sign that something bigger could be wrong. Changing the method of moving folders does not solve the problem, it's a workaround.

Are these files missing in the Library Thumbnail view at all?

That would be indicated by an "!" (exclamation mark) in the top right corner of the thumbnail preview.

Me estoy volviendo loca.
