カラーピッカーに＃色番号を表示させたいです。色番号がカラーピッカーの最下部に表示されなくなりました。

What version of Photoshop are you using?

Looks like your document is 32 bits/channel, which has a different color picker.

Go to Image>Mode and change to 16 or 8 bits/channel to get the normal color picker.

@とだとだ – Are you referring to Hex colours by using the # symbol?

通常はツールパネルかオプションパネルの表示色か背景色の該当項目をダブルクリックするだけですが、今回の操作内容はどのようなものでしょうか。

利用している具体的なバージョンなども記載されるのがいいでしょう。
