I now have the 25.6.0 version of Photoshop.
NEF files used to open to 130mb. They now open at 260mb.
Also, Save As goes straight to a PSD file instead of to a jpeg.
How do I go back to how my previous version of photoshop did things?

What bit depth are you using? PS will default to PSD, if you use 16bit rather than 8bit.

ACR used to open at 8 bit depth by default. That has now, very sensibly, been changed to 16 bit. So that doubles the file size.
The jpeg file format specification does not support 16 bit depth (or layers, transparency or alpha channels). A jpeg can only be a flat 8 bit pixel array, nothing beyond that. Basically anything you can do to an image in Photoshop puts it outside the jpeg specification.

Save As goes straight to a PSD file instead of to a jpeg in my new version of photoshop. How can I stop this?

What is the original file type that you're trying to save? PS will default to PSD if any of the file's conditions, like not flattened, has alpha channels, has paths, etc are present. Does it default to PSD if you start with a jpg?
