Grayscale goes black

I'm trying to convert a jpeg to grayscale in order to do a bitmap, but every time I click on discard in the grayscale dialog the picture goes all black. I already change modes to RGB and CMYK and still the same case.

Why do you convert to bitmap? 

Is this in connection with actual printing?

Does turning off »Use Graphics Processor« in the Performance Preferences (Photoshop > Preferences > Performance > Graphic Processor Settings) and restarting Photoshop have any bearing on the issue? 

Does turning on »Deactivate Native Canvas« (Photoshop > Preferences > Technology Previews) and restarting Photoshop have any bearing on the issue?

I can not reproduce on Win 11 using Photoshop 23.5.0. Have you tried to reset preferences what can solve weird problems sometimes Preferences in Photoshop (adobe.com)
