There are many way of removing backgrounds.  Which method you would use depends on the image content.   Normal Application manuals document the Applications features and user interface.   They do not document how you would do a particular thing like removing a background.  Masking will work best and is none destructive.   Books have been written about subjects like masking and selections.  There are many tutorials on the web for removing backgrounds using Photoshop.  Please search the web ther is no one correct way to remove a background.  It is also not posible to perfectly remove all backgrounds.

The short answer to your question is that the new background should be on a lower layer, and the subject on the upper layer. Create a layer mask on the layer with the subject to reveal what is on the lower layer with the new background.

You can place in the new background on top of the subject and mask the new background to let the subject on the lower layer show through.  The is particular useful when the sunject's background is white.  For you can set the new background layer blending mode mode to multiply for the lower white background will change nothing in the background layer  however the subject will be blended into the new background so the mask you use does not need to be perfect for you subject.  Area that are not revealed by the layer mask will still be visibly blended into the new background. without getting poor fringe areas.
