How do I learn how to make basic 3D objects in PhotoShop?
Most of the time, learning things via tutorial on Youtube or something is easy and fun, but with Photoshop 3D, it's a big challenge.
Often the tutorials will be about things like text into 3D or faking the dimensional effect - what I want to do is, for example, create, lets say, a muffin - how do I create it from scratch, manipulate it/paint it and export it?

You can do some very simple modelling and extruding in Photoshop but will quickly be limited. These tutorials may help you:

They are based on CS6 but 3D in Photoshop has hardly changed since that version.
If you really do want to get into 3D modelling you will need to use a full 3D application. There are many around, and the powerful Blender 3D is very good and free to use.

3D in Photoshop is pretty elementary. You'd be better off using a dedicated 3D program to get good results.

The simple answer is that you don't do it in Photoshop, but in a dedicated 3d modeling app, such as Blender.
Photoshop's 3d mode is not meant for modeling, or at the very least extremely limited and a (to say the very least) very frustrating experience.
In Blender (or any other 3d dedicated app) you would model/sculpt the muffin model, then UV map it, and import the model into Photoshop for painting. Although 3d painting in Photoshop is not a very pleasant experience either, in my opinion.
Finally you render it in Photoshop, but again rendering is slow as heck in Photoshop and the output quality hearkens back to two decades ago. Rendering in Blender is light-years faster and the output quality even more ahead.
So, in a nutshell:
- model, uv-map, and texture in Blender (or Maya, 3dsMax, Modo, 3dCoat, zBrush)
- render in Blender (or Maya, 3dsMax, Modo)
- import the render into Photoshop (if necessary).
Blender is open source and free.
