How do I make it so this old version of Photoshop doesn't show up anymore? I've updated past this version long ago, but it is still there after every update.

IMO you should install Photoshop 2020 as well as Photoshop 2021.   The are many issues in Photoshop 2021  you should have version 2020 installed in case you run into some issue in the current dot version of Photoshop 2021. version 22.x.   Adobe is still working on it. Adobe knows of many issues in Photoshop 2021.  https://helpx.adobe.com/photoshop/kb/known-issues.html

If you no longer need it, unistall PS 21 from your system.
