How can I delete the unused languages, all I need is English and German

You cannot delete anything. Those are simply sub-sets of your fonts. You can hide them in the character palette settings and even on the system level in your font settings.

I will take a look at this 

I used on my old Mac Monolingual to get rid of language I do not need, worked fine. 
Wont let me do it on this one, (maleware) thats why my question.

Hi Nicole,

 

At least some of these typefaces were installed by Apple and were included with macOS Monterey. You might check on the Apple forums to see if there is a way to remove them yet. If not, give feedback directly to Apple.

Even though you see them through Photoshop, fonts are not actually in Photoshop. If these are not required fonts, you can delete them with Font Book (Applications folder). Details here:
