There are two answers to your question, depending on how you want the appearance to change.

 

Do you want to change the appearance of the path as it will print or export? If so, it must not be left as a path, because paths are not visible in output. To have a visible stroke and fill color when printing or exporting, it must be a shape layer. When a drawing tool is set to Shape, you can see Fill and Stroke options in the options bar.

If you already drew paths that are not shape layers, you can convert them to shape layers using a method I posted in another discussion here. If you want shape layers instead of paths in the future, draw them with the options bar set to Shape, not Path.

 

Do you want to change how a path appears while editing it, but you don't want to convert it to a shape layer? If so, adjusting the Path Options in the options bar. The Thickness, Color, and Rubber Band options make paths easier to see, but only when editing them.
