Hello everyone , please can you explain to me why there is not a white ,black and gray color in the hue adjustement because i have a picture that i could not change the hue of the part on the picture colored in gray color, why ?

Because white, black and gray aren't colors. They are the total absence of color - no hue, no saturation. There is nothing to adjust.

 

To colorize a gray area you need to select it and use some of the other tools.
