First time soft proofing. Watched a video online about it, but I realized that I do not have the many printer options the video was showing.

We do not know which video you have watched and what was presented there.
Do you have the ICC profiles (for the Color Spaces for which you want to soft proof) installed on your OS?

Go to View - Proof Set up and then choose Custom
You will get a dialogue box showing the Device to Simulate. Click the right arrow for a list of Profiles installed. As c.pfaffenbilcher pointed out, the printer/paper profiles need to be installed in order to use them.

Thank you for your reply. I do not think I have ICC profiles installed and do not know how to install them. I am a beginner.

Both RGB- and CMYK-Color Spaces are usually described by ICC profiles.
If you don’t have them and actually need them (and not just because you saw them in a tutorial) you need to get them.
The ECI provides the ones relevant for (much of) Europe for free here
For others you may have to look around and specifically ask your print providers which ones they use and if they can provide them to you.
As for installing them remember that Google can be your »friend«:

The basic color spaces will be installed when you set up Photoshop so no need to worry about those.
For printer/paper profiles :
If you are printing on an inkjet or similar then you printer / paper manufacturer will normally have profiles available on their website. Pick those that apply to your specific printer and paper combination.
If you are using a 3rd party to print - then ask them for a profile. If they fob you off with "use sRGB" or cannot provide a specific print profile - then it is time to find a new 3rd party printer who can.
Installation varies according to whether you are on a Mac or PC (you have not stated which)
