Hi,
I have just puchased a Wacom Intuos Pro Large for working with Photoshop.
I haven't used a graphics tablet before and before I damage the packaging I'm wondering if this will be too large or cumbersome to work with.
I thought bigger would mean more accurate but the thing looks huge!

You can always map a large Wacom tablet to work like a small Wacon tablet. So it size is not a problem if you have the desk space required for a larger tablet. Most retouches like the way small tablet are mapped to your screens for just a little pen movement is required to address any point on your displays and may strokes. Users that use traditional art materials to create Art may like Larger Wacom tablets for the are use to making larger wrist movement creating their art and making brush strokes. So the larger wacom tablet format may be a better choice for them.
With scaling (zooming) whatever positioning is not a problem with any size tablet.

In addition to what JJ said, one should also consider where the tablet will be placed. I like the medium size, since it take up less room on my desk.

A large Wacom tablet is often perfect for illustrators and digital painters/sketchers, because it's closer to the size of a painting canvas or sheet of drawing paper. With a large Wacom tablet, artists won't have to scale their hand and arm gestures.
But for photography, a large tablet is often too much, forcing you to make bigger hand movements than you want while retouching. Wacom Intous Pro tablets have 5080 lines per inch, so even the small tablet has more resolution than your screen.
Painters and illustrators also use large tablets because they're more likely to want to work at a single size without changing the magnification, while photo editors are usually more comfortable zooming in and can therefore do detail work using a medium or even a small tablet.
The small tablet is about the size of a mouse pad; the other sizes need a lot more free desk space than that. And the free desk space for the tablet has to be in a place where your wrist won't get sore after a few hours; in other words, you can't put it just anywhere. The large size needs more free desk space than a laptop!
