Does Photoshop have maximum number of edits per image? I am thinking in particular about the Spot Healing Brush Tool. Thanks, Steve

Not at all but your history states will scroll off the list. The number of items is specified in the preferences which you can change.

I have set it to 100 but even then you can  exhaust this number so you can't go back to the first ones...

Has a limited number of history stated.  However you should be able to make as many stroke as you can before you fall to sleep then wake up and brush some more.  However Photoshop does have some limits. You can only have up to 8,000 layers, 53 Alpha channels,  Just so  many actions in the actions palette.  Photoshop has many different limits.
