After updating to PS version 23.0.2, Epson premium paper glossy is now missing from printer profile. I need it back.

Not sure why they don't show up in Photoshop and every other ICC aware application (or is this just a PS issue)?
You could try moving (or coping) them here:
/Users/~(yourlibraryname)~/Library/ColorSync/Profiles
See them now?

11.6.2 only dropped in the last couple of weeks, it is a fresh upgrade.

You may have a bug in that OS, but there is NOTHING WRONG with those profiles.
You may have specific and individual issues or conflicts on your Mac, but there is NOTHING WRONG with those profiles.
You can try upgrading your OS, you can ask Apple to fix their bugs (unlikely), but with a modern version of Lightroom Classic, and Photoshop, the profiles are fine. This is an Adobe forum; there is nothing Adobe needs to do; the profiles work.

Okay sure, there may be nothing wrong with those profiles, based on the tools you are using to inspect them.
But they don't work with the latest version of Big Sur and the latest Adobe software.
All I'm trying to say is that this problem we are discussing here has a new dimension that was introduced with a very recent MacOS update. It's very unlikely it's my system, my system is clean, and I was printing fine with it the week before I installed the update. I also happen to be a Software Engineer so I know a thing or two about the technical details involved here.
I get that it might not be an Adobe bug, I'm just trying to get to the bottom of a crippling issue, and so far the only solution that works would be to wipe my OS and back up to 11.6.1, I would hate to have to do that.
I think other people that are experiencing this issue might want to know that it may have been caused by upgrading to 11.6.2.
I also think that people who are running older versions of Big Sur might want to know about this before applying the latest update.
And again, if anybody is successfully using this setup with Mac OS 11.6.2, I'd love to hear about it so I can figure out what they're doing differently.

They (the profiles) are not corrupt. Again, contact Apple; the profiles and Adobe's software are fine. Again, there isn't anything Adobe can do to fix an Apple OS bug.

If Adobe's software is working fine, why do those profiles not even appear in the list in Lightroom Classic? They are installed in the same directory as these profiles which DO appear. The only profiles that appear are recent specialized media profiles, the newer ones.

They do show, for me as illustrated.
I can again tell you, the ICC profiles your sent me are fine.
Did you see or try the trick of finding the profiles in the pacakge (you must have since you sent them) and moving them into the actual ColorSync profile folder?

The problem is we're going around in circles, you've already mentioned you're not using Mac OS 11.6.2, and that is central to the issue.
Yes, I have tried relocating the profiles as suggested, they still do not appear. There is nothing I have been able to do to get them to appear on my system running Mac OS 11.6.2.
They appeared fine in 11.6.1 and every other version of Big Sur I have ever run. But as of 11.6.2, they do not appear in the list in Lightroom. I would love to know how to get them to appear in 11.6.2.
The problem is I do not want to upgrade forward to Monterey yet, and I don't know of a simple way to roll back to 11.6.1. So I'm stuck with 11.6.2 and 11.6.2 is giving me this huge issue.

Then downgrade or upgrade your OS.
I think some people enjoy complaining almost as much as they enjoy doing nothing about it.

Epson printer profiles are missing in Photoshop manages color in the print dialog (Mac)
To use "Photoshop Manages Color" properly (to make accurate prints) you need access to the printer manufacturer's paper specific profiles, since you need to select the relevant paper profile in that dialog.
Using "Printer Manages Color" should work for Epson’s own papers, as long as the printer driver is correctly installed.
Printer Manages Color [based on the media type selected] calls upon ICC printer profiles from a different installed folder*
[*usually a hidden one, this is so they don't get deleted inadvertently, more on that and how to find them below].

[Not in the “your username”/library/ ]

Inside the ICCProfiles folder (see above) is another folder containing the printer name, e.g: Epson Stylus Pro 4900_4910.profiles
If you right click [or ‘control’ click] it and select "show package contents"
A contents folder appears
Now look inside that folder and you’ll find the ”resources" folder.

These are the icc profiles which used within the Epson driver [e.g. when you select Photoshop’s 'printer manages colour' option],
DO NOT DELETE OR MOVE THEM. It’s OK to copy of course.
SO - don't drag to move them as this actually removes them from the original folder
You can copy to your normal ICC profiles folder which is in the system library
[ computer name/hard disk name/Library/Colorsync/Profiles ]
Restart Photoshop, can you now see the profiles you copied across in Photoshop’s print dialog under "Photoshop manages color"?

There was a security change in CorlorSync with the update to Mac Os 11.6.2.
Maybe this is why some of the profiles are not used by Colorsync anymore.

This is almost certainly the problem. Since updating to 11.6.2, I can only access _some_ of the profiles for my Epson 700 printer from inside Adobe apps. The ones I can access are the newer profiles that media installer downloads. The ones that came with teh driver, dated May 26, 2021 in this list, do not work.
If I copy them to my user profiles directory, I can get them to appear in the list in photoshop, but not lightroom. However if I try to print with one of them I just get a blank page.
It seems EXACTLY like the profiles are not passing some kind of security muster.
I guess this is on Epson to update their profiles. I now cannot make decent prints until it is fixed. I wish I knew some way to escalate this with Epson.
