PS is currently set-up to import my pdfs in greyscale.  Does anyone know how to change the default to CMYK?

I believe the open dialog defaults to the last used option. Open a PDF, change the color to CMYK, and then close the document. When you open the next PDF it should default to CMYK.

What do you mean by 'import'? Are you opening the PDF file in Ps with File>Open, or are you placing the PDF into an already open document?
