Pen Tool Path Options No Longer Working

I used to be able to change the options when usng the PEN TOOL to draw PATHS, ie - change the color of the path to BLUE and change the line thickness as I was drawing out the Path... but now that option is greyed out... am I doing something wrong somewhere? I love to be able to change the color and thickness of the path line to be able to see it more easily... Thank You!!!
