Is there a way to change the default pen tool selection color?

There are times when working on a similar color image when the lines of the tool seem to disappear.

There certainly is! Click on the cog icon in the Options Bar, and then on the color drop down. You can adjust the path line thickness as well.

OK, sorry about that. It sounds like you have an earlier Photoshop version. I don't remember exactly when the feature was added, but it was several versions back now — 2018 maybe?
