PHOTOSHOP 2025, iMac Retina 4K 2019, 32GB RAM
If I am trying to select a font and I use the slider to scroll down to a font that (for example) starts with the letter "P"... Photoshop cycles through a sample of every font (from "A" to "P") and gives me a preview on my text layer. It slows everything down tremendously. I don't need to see EVERY font preview.
I used to be able to skip the previews, by usung the scroll bar (rather than the down arrow).
**Is there a way to turn off this feature/bug?

In Photoshop you can go to Type>Font Preview Size and turn it off or select another size.
Unfortunately, the above doesn't stop the actual preview on the Text layer itself.
I can still use the scroll bar here in Photoshop 2025 (ps ver 26.0) macOS Sequoia 15.1 without getting a preview of the font on the actual Text layer.

Okay after some furthur experimentation i can see what your referring to.
In Photoshop 2023 it's very easy to use the scroll bar to scroll and choose the exact font without seeing any change in the Text layer until you select a specific font.
With Photoshop 2024/2025 as soon as one stops scrolling and lets go of the mouse/trackpad Photoshop starts showing previews of seemly all the fonts you scrolled past making it a real pain to select a specific font.

Yes!! It's an enormous pain...
My work-around has been to scroll through fonts in Fontbook, then type the font name into the search box.
This was not a problem before the 2024 version. I've been Photoshopping since version 1.0.
