Hi

Seems a lot of people are having issues with CC 21019 on the MAC OS

Have you tried resetting Photoshop preferences

Also try enabling this option in preferences and resetting Photoshop

If neither of them help try installing CC 2018

You've replied faster & with a more helpful reply than I've been able to get any help from Adobe tech support thus far. 40 minutes & counting with their online chat. Unbelievable.

Thanks so much for the advice. I will try this & report back with findings. It's unfortunate that I can't exactly pinpoint what causes the crashing, so I'll have to use the machine & wait-and-see...
