My cursor has gone from a single cross to a single cross with a smaller cross in the bottom right hand side of it. I can't get rid of it. Any ideas would be appreciated.

Because (as Melissa Piccone pointed out) so far we do not know which Tool you are using and not what the cursor actually looks like.

I'm not an expert. Mainly stick to a few basics. Today I was attempting to put a speech bubble in a photo, which I managed to do, but at the end of it, my pointer/cursor looked as it does in the above diagram, i.e 2 crosses instead of 1. Also I noticed, if I select a photo, say for cropping, I now have to manually deselect it if I change my mind. Up until today it would deselect the photo the second I clicked on another part of the screen.

Look at the control bar. There are several icons for different modi eg New, Add, Substract ...
It seems you cursor is in mode Add
Click on New and your cursor should change to "Normal"
