Photoshop custom workspace/brushes/preferences/etc resets itself from time to time

So, I'm finding that from time to time the Adobe preferences folder would just get deleted from the AppData/Roaming/Adobe location, so my workspace and custom brushes got reset to default. I've had to make a backup of these folders to copy back in. This affects not just Photoshop, but also After Effects and Illustrator.  I just don't really have custom settings for the others, so it doesn't bother me.

 

It's not that the preferences file got corrupted or anything. The entire Adobe folder would just get emptied out by itself. I'm not sure why this is happening, but this was the case ever since I got my Windows 11 computer brand new. Never had this happen ever back when I was still using Windows 8. Is it an overly aggressive antivirus? I just use the default Windows Defender.
