Hi, so when I export assets from my psd, color space is set by default in sRGB. In case of a fast export I cannot switchback to "normal" RGB, But Photoshop still display my default screen color profile. How can I change that ? Should I switch my PS color profile to sRGB ? thanks!

Export doesn't have a default profile. It strips the profile by default. To include the profile, you need to check the "embed profile" box.

Without an embedded profile, Photoshop opens the file as whatever your working space is set to.

I don't know what you mean by "Photoshop will still display my default screen color profile". The monitor profile should never, ever be used on document level. If you have changed your color settings to use the monitor profile as working space, change it back. The monitor profile should not appear anywhere in the color settings. That's not where it belongs.
